from what i know too much air gives you large bubbles which are ineffective in adhering to protein. when you tune the air inlet, you will reach a point where you get maximum skimming with smaller bubbles yet enough air as well

When u give the skimer maximum air, the bubbles form will be wet, resulting in very thin wet skim..

Thus wasting ur salt water.. becos u will be pouring away very dilute skimates.

when u tune it to the right amt, the bubbles form will be dryer giving a thicker layer of froth , result in thick concentrated skimate.

Thick froth seems to break in faster in my opinion.

any reason why we don't tune the air inlet to the maximum?

my thought is the maximum the better, then why still need to tune?

First thing I do is set water level in reaction chamber. Next I adjust the air intake until foam starts to rise in reaction chamber. The trick is to see the foam slowly building up at the set water level but should the water level rise, then I lower it. My idea is to see the foam moving slowly towards the discharge of the cup. Too strong an air intake will prevent the formation of rising foam,instead the column may just rise and fall and not move upwards due to the turbulence.
