Found a link that describes simply how it works, but I think there's still more to it.

I know how to do if there's no air bubble in it but with air bubble then will be a big question mark Liao.

Coz in order for the water to stay above with air bubble keep going in there must be a vacuum related thing that keep vacuuming the air to hold the water volume in it.

So I would say it's a complicated technolgy also...
