I was honored to be invited for a lunch meeting with Chef Daniel yesterday.

Most of us may have know Chef Daniel through a Mediacorp programme (Buzzing Cashier) hosted by Kim Ng and Quan Yifeng. Among all the Sifus featured, I find Chef Daniel, more down to earth, sincere and genuine.

Chef Daniel Kitchen is located at Iluma 7th Floor, I have been there for lunch about 2 weeks ago for another meeting and my guests (Australians) was very impressed with the way western dishes were prepared with such creative ways.

During my short discussion with Chef, I learned a lot about his passion for good quality food that is lacking in Singapore nowadays. I remember in the early 80s; most diners will head to hotels for good food but in the recent years hoteliers are more concern with being in the black that they have resorted to buying ready prepared food from commercial kitchen with little regards to the quality.

That's why we are seeing more and more good chefs leaving hotels and setting up restaurants serving food bearing their signature.

Char Siew Lamb Rack - No hint of the lamb smell even without mint sauce, the unique Japanese wild and glutinous rice that accompanies gave it the additional punch.

Hotate Appetizer - I like scallops especially raw however, many times I have been disappointed with freshness for such dish at some Japanese chain restaurant I visited. I find the hotate here fresh and also realized that they get their scallops from Hokkaido.

The outlook of the restaurant is very typical family style which I think can do with a little re-designing, especially the echoe problem that need to be resolved with some table cloth or carpeting.

Chef Daniel Kitchen is part of Wah Lian Amusement which is the anchor tenant in Iluma. Beside Chef Daniel Kitchen they also operate Seven (Sport Bar), Bounce (Private Dinning), Arcadia (Arcade) and Colosseum (LAN Gaming).

Bounce is a private dinning room for up to 16pax and I learned that it is the ideal place for Slow Food. Slow Food in Singapore is currently enjoyed by an exclusive group of people. The session usually start around noon and end around 6pm!!!

Being the only tenant in the entire 7 floor roof top, I find the location ideal for wedding and ROM ceremony as well.

Thus, those looking for a good set (quality ingredients, excellence culinary skills) lunch around bugis, their set lunch promo is only $10.80. The Ala Carte Main Course is between $20-$35.

Oh... I've been there some time back, but the place was still under renovation. I like the rooftop ambiance.

Yup, the ambience is good especially in the twilight.

I believe they are going to do some minor reno to address the echo problems.

Sorry bro Gouldian that I added this in. Many are not aware that Foie Gras are derived from an extreme form of animal cruelty by modern mankind. We don't need such food derived from cruelty for survival.

Geese/ducks were subject to extreme painful torture from force-feeding and living conditions. "Those people mechanised a tube at the end of a gun that is forced through the birds throat and down the oesophagus, sometimes they force down too much food and rupture the stomach. The birds' livers become so enlarged…that according to documentation by veterinarians, the animals must experience unspeakable pain and suffering. Birds have literally exploded from these forced feedings. The results of necropsies on dead birds that have been force-fed reveal ruptured livers, throat damage, esophageal trauma, and food spilling from the dead animals' throats and out of their nostrils."

"In foie gras factory farms, workers are pushed to force-feed birds as quickly as possible. This bird's beak was likely broken when a pipe was shoved down its throat. The liver is then made into a pate called Foie Gras. The eminent Cardiologist David T Nash and many Dieticians are unable to understand why anyone would eat this diseased animal tissue (Hepatic Lipidosis), the fat is mostly Palmitic Acid , a saturated fat detrimental to health and known to drastically bump up the Cholesterol level." - http://www.grovepublishing.co.uk/

Sometimes,I really hate our (human) existence. We are given so much wisdom, power and control over so many life form on earth and we are exploiting them to the fullest without remorse. Sigh....

It's ok bro. Just avoid it next time. I'm once guilty of eating it too until a friend warned me about eating such diseased organ, alongside extreme animal cruelty.

Last Saturday, a bro went but too bad they were closed for a private event. Heard they hosted a special dinner to send off the Singapore Team for the Gourmet Summit.

Yes I agree on the foie graz.. I remember eating it once many years back and then reading it up on the net how they made it and after that I swore to NEVER TOUCH it again. .. yeah it tastes nice ( I still remember how it is despite being at least 8 years since I actually ate it) but I think we can live without it la.

acutally.. wait until you see how they choose chicks from eggs in the chicken factory, I think it will make everyone here think twice before even looking at chicken the same way again...

In foie gras farms, i think it's the opposite. All female ducklings are killed while male ones are allowed to live...but sadly, to later live and die in a horror and painful death. I can't imagine one day aliens came to Earth and did the same way to humans. All of us would be screaming like hell.

I am not a vegetarian, but I do avoid meat whenever possible. Like the chinese idiom 饮水思源 says, it is important to have an awareness of where your food comes from and what goes into it. Besides the cruelty which most of us are not exposed to, there is lots of genetically enhanced or modified food products that we eat, unaware of their effects.

I used to be a fast food junkie in my younger days, but ever since turning to organic and vegetarian food (40 to 50% of my diet) 3 or 4 years ago, I've stopped falling sick as often.

I can't imagine one day aliens came to Earth and did the same way to humans. All of us would be screaming like hell.

Sadly, if aliens did visit us, our first thought would be "Hmm... alien meat... can eat anot?" :lol:
