general rule of thumb wld be 4" to 6" thick. grade of sand wld be 0 or a mixture of 0 and 1. u will be able to find more info if u run a search on dsb or jaulbert method in src.

This more or less depends on the individual aquarist. Since this is FOWLR, its ok to have higher nitrates as nitrates do not affect fishes as much as corals.

However, IMO if you don't mind setting up a DSB and you do not have any fish that dig into the sandbed, go ahead and setup one.
