Apparently, the one that stays red thru out the nite is the real peppermint shrimp - lysmata wurdemanni. The "fake" peppermint have very similar strips as the real McCoy but fades or loses its colouring in the nite time. as for whether they feed on aiptasia....its like playing the roulette.
